BBQ Turkey Thigh Steaks with roasted potato & bacon salad
Serves: 4

1 pack BBQ Turkey Thigh Steaks
1 kg chat potatoes, halved
Olive oil cooking spray
3 rashers bacon (175g), diced
¼ cup light sour cream
1 tablespoon milk
1 tablespoon grainy mustard
¼ cup dill sprigs, finely chopped
Salt and pepper to season
- Cook BBQ Turkey Thigh Steaks as per pack instructions
- Preheat oven to 220°C. Line a large baking tray with baking paper. Place potatoes onto prepared tray and spray with olive oil. Put tray on top shelf in oven and roast potatoes for 35-40 minutes or until potatoes are golden and crisp.
- Meanwhile, heat a non stick frying pan over a medium heat. Add bacon and cook, stirring often, for 4-5 minutes or until crisp. Transfer to a plate lined with paper towel.
- Whisk sour cream, milk, mustard, dill and salt and pepper in a bowl. Put potatoes, bacon and sour cream mixture into a large bowl. Toss until well combined. Serve warm.
