Turkey Breast Stir Fry

Turkey Stir Fry with Rice Noodles Coriander and Chilli
Serves 4

200g thin, dried rice noodles
1 large lemon, juiced, (you will need 1/3 cup)
2 tablespoons fish sauce
1 tablespoon brown sugar
1 tablespoon vegetable oil
500g Turkey Breast Stir Fry
5 green onions, thinly sliced
4 cm piece fresh ginger, peeled, grated
1 long red chilli, deseeded, finely chopped
1 cup coriander leaves
Extra long red chilli, deseeded, thinly sliced, diagonally
1/2 cup cashew, roughly chopped
- Put noodles into a large bowl. Cover with boiling water and stand for 5 minutes or until soft. Drain.
- Combine lemon juice, fish sauce and brown sugar in a jug.
- Heat a wok over high heat. When hot add 1 teaspoon oil and swirl around wok. Add ΒΌ turkey steak strips and stir fry for 1-2 minutes or until browned. Transfer to a bowl. Cook remaining portions of turkey steak, adding more oil as required. Transfer to bowl. Add onions, ginger and chilli to wok and stir fry for 1-2 minutes or until onions are bright green and soft. Return turkey to wok with lemon mixture and toss until well combined. Remove from heat and stir through coriander. Add noodles to wok and toss until well combined. Serve in bowls topped with chilli slices and chopped nuts.
