Turkey Drumsticks & Vegetable Braise
Serves 4

 

 

1 pack Turkey Drumsticks
3 tomatoes (160g each), cut into wedges
2 bunches asparagus, trimmed, cut into thirds
1 large red capsicum (250g), deseeded, chopped
1 large green capsicum (250g), deseeded, chopped
1 red onion, cut into thin wedges
1/2 cup chicken stock or water
6 sprigs lemon thyme
Olive oil cooking spray

  1. Preheat oven to 180°C. Place tomatoes, asparagus, red capsicum, green capsicum, onion, stock and thyme sprigs into a large roasting pan. Season with salt and freshly ground black pepper. Toss until well combined.
  2. Place turkey drumsticks on top of vegetables. Spray with olive oil and put into oven. Roast for 1 hour 15 minutes or until turkey is cooked through. Serve turkey drumsticks with vegetables.
