Turkey Drumsticks & Vegetable Braise
Serves 4

1 pack Turkey Drumsticks
3 tomatoes (160g each), cut into wedges
2 bunches asparagus, trimmed, cut into thirds
1 large red capsicum (250g), deseeded, chopped
1 large green capsicum (250g), deseeded, chopped
1 red onion, cut into thin wedges
1/2 cup chicken stock or water
6 sprigs lemon thyme
Olive oil cooking spray
- Preheat oven to 180°C. Place tomatoes, asparagus, red capsicum, green capsicum, onion, stock and thyme sprigs into a large roasting pan. Season with salt and freshly ground black pepper. Toss until well combined.
- Place turkey drumsticks on top of vegetables. Spray with olive oil and put into oven. Roast for 1 hour 15 minutes or until turkey is cooked through. Serve turkey drumsticks with vegetables.
