Apple Brown Rice Stuffing

  • 1 12 cups brown rice, uncooked
  • 3 12 cups apple juice, divided
  • 1 apple, diced
  • 12 cup onion, chopped
  • 12 cup celery, sliced
  • 13 cup raisins
  • 12 teaspoon poultry seasoning
  • 14 teaspoon dried thyme
  • 14 teaspoon pepper
  • 2 teaspoons margarine
  • 13 cup bran
  • 13 cup slivered almonds

Prepare rice according to package directions, using 3 1/4 cups apple juice for the liquid. Cook diced apple, chopped onion, sliced celery, raisins, poultry seasoning, thyme, and pepper in margarine in a large skillet until the vegetables are tender and crisp. Stir in the cooked brown rice, bran, slivered almonds, and remaining apple juice. Use as stuffing for turkey or bake separately in a pan at 175°C (350°F) for 35 minutes.
