Jonathan Bruell, one of Australia's maestros of the kitchen, is responsible for the innovative cuisine and menu design at The Sebel Pier One Sydney’s fashionable Front Restaurant – part of the cosmopolitan Walsh Bay range of eateries.

With his talented team, Jonathan implements a variety of lunch and dinner menus for Front Restaurant, as well as a host of meals for innumerable functions in the hotel.

Using only the best local produce, he compiles his market list of top grade meat, organic chickens, fruits, vegetables, fresh fish and seafood daily, to structure a la carte and daily special menus around Sydney’s wonderful climate.

There have been many highlights in Jonathan’s career, but nothing pleases him more than the host of satisfied guests who return to enjoy his style of cooking and the imaginative menus at Front Restaurant.

Commenting on Front Restaurant Jonathan Bruell said, “Food for me is all about giving pleasure.  I start with an idea inspired by produce, colours, and flavours and of course the visual effect and try to have fun along the way!  In fact food is like fashion, it’s always changing, but the classic dishes remain”.

This year Jonathan developed two special turkey dishes to give consumers ideas on how best to use turkey at Christmas and throughout the year. “Turkey is a very versatile meat and there are a range of different cuts available which people can experiment with to create the perfect turkey dish. From rissoles to turkey chops to the traditional whole turkey, there is every sign that turkey will be used a great deal more in cooking and not just at Christmas time”, Chef Bruell commented.

Chef Bruell’s menus change frequently, and he has several daily specials which allow him to follow the availability of seasonal produce to complement the climate and the ever increasing demands of a more health conscious clientele.

Bruell runs a happy kitchen and a team of talented staff, constantly pushing them to excel, which in turn allows them to share the spotlight.  He is adamant that he is only as good as his team. Chef Bruell’s special talents are even apparent in the smallest touches which simply add to the enviable reputation of The Sebel Pier One Sydney.
