Ingredients
- 1kg Ingham Ready to Roast Turkey Breast
- 3⁄4 cup sweet mango conserve
- 1⁄2 cup macadamia nuts, toasted, roughly chopped
- 1 lime, finely grated rind & juice
- steamed asparagus, to serve
- roasted potatoes, to serve
- sea salt flakes and freshly ground black pepper, to season
Instructions
Preheat oven to 180ÂșC. Place turkey breast on a rack in ovenproof dish with 1 cup of water, leaving foil intact. Bake for 60 minutes.
Combine conserve, lime rind and juice in a small bowl. Stir well to combine.
Remove turkey from oven, discard foil wrapping. Place turkey on some baking paper in baking dish. Spoon mango mixture over turkey. Bake uncovered for 30 minutes, basting every 10 minutes, until golden and cooked through. Remove from oven, cover. Allow to sit for 10 minutes.
Sprinkle top of turkey with macadamia nuts. Serve slices of roast turkey with any sauce from pan, roasted potatoes and steamed asparagus.
