Mediterranean Tomato and Oregano Marinade
Ingredients
- 1⁄3 cup tomato puree
- 1⁄4 cup white wine
- 2 tablespoons olive oil
- Finely grated rind of 1 lemon
- 2 tablespoons lemon juice
- 1 tablespoon finely chopped oregano leaves
- 1 teaspoon salt
- Freshly ground black pepper
- Fresh Turkey Pieces
Instructions
Combine tomato puree, white wine, olive oil, lemon rind, lemon juice, oregano, salt and pepper in a jug.
Place turkey pieces into a shallow ceramic dish. Pour marinade over turkey. Turn turkey pieces until well coated with marinade. Cover and refrigerate for at least 2 hours, overnight if possible.
Cook as per pack instructions.
