Turkey and Cranberry Sausage Rolls

  • 1 kg Fresh Turkey Mince
  • 1 brown onion, finely chopped
  • 12 cup fresh breadcrumbs
  • 2 teaspoons fresh lemon thyme leaves
  • 1 cup cranberry sauce
  • 100g camembert cheese, finely chopped
  • 2 sheets frozen ready rolled Puff Pastry, partially thawed
  • 1 egg, lightly beaten
  • sea salt flakes and freshly ground black pepper

Preheat oven to 180ÂșC. Line 2 baking trays with baking paper.

In a large bowl, mix all filling ingredients and combine well.

Cut a sheet of pastry in half, spoon 1/4 of turkey mixture along one long edge of pastry. Brush opposite edge with water and roll to encase filling, press to seal. Cut into 4 smaller rolls. Repeat with remaining pastry and turkey mixture.

Brush rolls with egg, sprinkle with salt flakes and pepper. Bake in oven for 20 minutes or until cooked through and pastry is golden. Serve with extra cranberry sauce if desired.

Turkey Tips

  • If you cook poultry to eat later, refrigerate while hot.
  • Use separate cutting boards and utensils when handling raw and cooked poultry. Wash these thoroughly with hot, soapy water before and after handling. Also use separate cutting boards from poultry for fruit and vegetables.
  • After purchasing fully cooked smallgoods, ensure they are stored in the refrigerator with their wrapping sealed until required. After opening, they must be consumed within 2-3 days.
  • Defrost in the refrigerator only, not on the bench.
